Strawberry Banana Cream Pie Cups

Ingredients
Custard
- 1 cup Strawberries & Cream Premier Protein Shake
- 3 Tbsp Sugar
- 2 Tbsp Cornstarch
- 2 Egg Yolks
- 3 Tbsp Butter
Crumbs
- 2 Tbsp Butter
- ½ cup Graham Cracker Crumbs
- 2 Tbsp Sugar
Garnish
- ¾ cup Cream
- 2 Tbsp Sugar
- 1 ½ cup Banana
Directions
- Whisk sugar, cornstarch and egg yolks in a small pot together. Add Strawberries & Cream Premier Protein Shake to the mix gradually and ensure it’s all incorporated.
- Heat on the stove over low heat while whisking. The mix will start to thicken as it heats up to a simmer. Continue to whisk to make sure it comes out smooth. Once thickened, take off the heat, add butter, and whisk until incorporated. Let cool.
- In a medium frying pan, melt butter and add graham crumbs and sugar on medium heat. Slowly toast or brown mix while stirring with a spoon. After a few minutes of toasting, let crumbs fully cool on the side.
- Whip cream and sugar in a bowl until stiff peaks. Cut up banana into chunks.
- To build cups, place some graham crumbs in the bottom on the cups. Next, evenly split custard between your cups. Add banana on top of custard and then whipped cream on top.
- Finish with remaining graham crumbs.
