Ingredients
Dry
- 2 cups All Purpose Flour
- 1 ½ tsp Baking Powder
- ½ cup Oats
Filling
- 1 cup Apple (peeled & grated)
- 1 ½ cup Carrots (peeled & grated)
- 2/3 cup Banana (peeled & finely chopped)
- ¾ cup Raisins
- ¾ cup Walnuts (chopped)
Wet
- 1 cup Pumpkin Spice Premier Protein Shake
- 1 ¼ cup Brown Sugar
- 3 Eggs
- ¼ cup Oil
Directions
- Pre-heat oven to 375 degrees. Grease non-stick muffin tins or line with paper muffin liners.
- Whisk together dry ingredients in a bowl. Set aside.
- In a large bowl, combine filling ingredients.
- In a medium bowl, whisk together wet ingredients and add to the large bowl with filling ingredients. Stir to combine.
- Add the dry ingredients to the large bowl and mix until incorporated.
- Fill each muffin tin to the top and bake for 18-20 minutes or until a toothpick comes out clean.
