Ingredients

Dry

  • 2 cups All Purpose Flour
  • 1 ½ tsp Baking Powder
  • ½ cup Oats

Filling

  • 1 cup Apple (peeled & grated)
  • 1 ½ cup Carrots (peeled & grated)
  • 2/3 cup Banana (peeled & finely chopped)
  • ¾ cup Raisins
  • ¾ cup Walnuts (chopped)

Wet

Directions

  1. Pre-heat oven to 375 degrees. Grease non-stick muffin tins or line with paper muffin liners.
  2. Whisk together dry ingredients in a bowl. Set aside.
  3. In a large bowl, combine filling ingredients.
  4. In a medium bowl, whisk together wet ingredients and add to the large bowl with filling ingredients. Stir to combine.
  5. Add the dry ingredients to the large bowl and mix until incorporated.
  6. Fill each muffin tin to the top and bake for 18-20 minutes or until a toothpick comes out clean.
