Ingredients
- 2 cups blanched almond flour
 - ½ cup Premier Vanilla Protein Powder
 - 1 tbsp pumpkin pie spice
 - 1 ½ tsp baking soda
 - 1 tsp salt
 - 1 cup unsalted butter
 - 1 ¾ cups coconut sugar
 - 1 large egg
 - 1 ½ cups pumpkin puree
 - 2 tbsp vanilla extract
 - 1 to 1 ½ cups chocolate chips or chopped walnuts
 
Directions
- Preheat the oven to 350°F. Butter or spray a piece of parchment paper with nonstick cooking spray and place in a baking dish.
 - Whisk together the almond flour, Vanilla Premier Protein powder, pumpkin pie spice, baking soda, and salt in a large bowl.
 - Using an electric mixer, beat the butter until pale and creamy. Add the coconut sugar and beat until fluffy. Mix in the egg, pumpkin puree, and vanilla.
 - Slowly add the dry flour mixture to the wet ingredients, and mix until combined.
 - Fold in the chocolate chips or walnuts with a rubber spatula.
 - Spread the batter evenly into a 9 x 13 baking dish.
 - Bake for 35 to 45 minutes until a toothpick inserted in the center comes out clean. Cover with foil if browning too fast before the center is done.
 - Let cool for 20 minutes in the dish before transferring to a wire rack to cool completely. Cut into bars and enjoy!
